My cousin, Amy, and I ventured on something new in our life last Saturday - all day freezer cooking! Yup, you read right. We planned for about 3 1/2 weeks of what we were going to cook, what ingredients we had, what ingredients we needed to buy, and how we were going to do this.
We picked last Saturday because quite frankly that was the only day we both had availability. With kids in tow, we (myself, Ky & Em) arrived at Amy's house at 8:45am. Once there, we unloaded the groceries onto her dining table and then, once the kids were playing (shortly thereafter), we then decided our menu, which were Disney waffles. Amy decided to purchase a Disney shape waffle maker consisting of Mickey (of course), Minnie, Goofy, Pluto, Donald and Daisy. The kids loved them. One huge freezer bag full!
Then, it was on to homemade sauce and homemade meatballs. The meatballs we made were with ground venesin, pork and beef. I normally make mine with just pork and beef, but Amy had gotten a pound from her father-in-law, so we thought to add. It did give some good flavor. We ended up making a little more than 10 lbs of meatballs. (There were a lot!). I made the meatballs while Amy made the sauce. Oops, can't forget our little helper, Kylie, she formed the meatballs and put them on baking sheets to put in the oven. Thereafter, we added some to the sauce for flavoring, all others we froze in huge Ziploc baggies. The sauce we ended up putting in Ziploc containers and using for some other dishes.
Thereafter, we made the following additional meals:
Venesin stew - sadly to say, I ended up giving 1 container of this to my friend Alicia and John and the other to my brother as my husband does not like venesen and I didn't want it to go to waste!
Chicken and Broccoli Rice Casserole - I think we made like 8 of these in aluminum pans. These too are in the freezer and will be eaten on a night I just don't feel like cooking!
Chicken Pot Pie - we each got 1 huge aluminum pan. My husband does not like chicken pot pies, so this will be something I cook when he has to work a double.
Hamburger Stew - DELICIOUS! This hands down, is probably one of the best tasting soups I have ever made. We each had 2 huge bowls to bring home and of course we ate ours all gone :( We ate this for dinner on Monday. This I will definately plan on making again and freezing, that is unless we don't eat it first!
Lasagna Roll Ups - we each had 2 aluminum pans full. We cooked ours Wednesday and still have leftovers. This will be good for the remaining of the week (lunch or dinner).
Rotisserie Chicken shredded and flavored with some type of cajun spice Amy had (delicious), (tonight, Thursday, Dan & I actually made chicken panini's with this and it was delicious)
Calzones (sausage/cheese; sausage/pepperoni/cheese; sausage/pepperoni/cheese/supprasatta). We had these Saturday night when the girls and I got home. We were able to freeze 10, so there are still quite a few meals leftover.
Pumpkin muffins - if you want a low fat food, but delicious, well I got a recipe for you! These are ever so yummy and makes a lot. We made 4 boxes of this and each got approximately 25 good size mufffins. This recipe consists of 1 spice cake mix to 1 can of pumpkin, mix together and bake according to the directions on the box. That's it! Easy and soooo yummy! That is if you like the taste of pumpkin, fortunately I do.
Applesauce muffins - same thing, though with additional ingredients. Buy a spice cake mix (we used Betty Crocker), and on the side of the box is the recipe. We used Amy's homemade german applesauce - yummy!!! Again, we each got approximately 25 of these. When I got home from Amy's I individually wrapped each muffin (pumpkin and applesauce) and put in the freezer. In the morning when I leave for work, I take one out and it is thawed by the time I want to snack on it.
Well, that is my all day freezer cooking day in a nut shell. Our cooking officially ended at 6pm. Thankfully Amy had 2 pressure cookers that we used, if not, we definately would not have been able to make everything that we did. The pressure cookers are amazing. So amazing that normally cooking a rotisserie chicken it would have taken a few hours, nope, 30 minutes - that is it - fully cooked and so tasty.
Would I do it again, yup, but my feet/legs need some rest. If this is something you are planning on doing, one word of advice, wear a very comfortable and supportive pair of sneakers/shoes. Iwore my crocs and they definately were not supportive. Though my husband was when I got home. He rubbed my feet and calves - what an awesome guy, or shall we say, that is the least he can do for me suffering all day to make him food. lol!
I don't have individual pictures of what we made, but I did take a picture of everything once I got home. Here it is, all packaged and ready to freeze, so the nights that I don't want to cook, we just take out and pop in the oven. How nice is that???
